Tip: A great place to find an inexpensive cast iron pan is at yard sales. They will probably be rusty or not seasoned, but there are plenty of videos online that can show you how to restore it to like new condition.

Just like cast iron, these pans are very versatile and durable. Another thing that they have in common with cast iron is that they have to be seasoned. These pans are the #1 choice in many professional kitchens.

Coppercopper pan

Copper is a great conductor, it can heat up and cool down quickly. Professional chefs like to use copper cookware when they are preparing temperature sensitive dishes and sauces. Good copper cookware can be rather expensive.

Much like a cast iron pan, the black (carbon) steel pan needs to be seasoned to make it non-stick as well as prolong the life of the pan. The versatility of the steel pan is what makes it a popular choice amongst professionals. With good heat distribution and high heat compatibility, you can prepare any dish. The beauty of the steel pan, just like cast iron, is that you can pop it in the oven as well.

Swiss Diamond pans are PFOA free, however they do contain PTFE. Studies show that PTFE is safe and is used on most non-stick surfaces. The Red Copper pan is a quality copper infused ceramic coated pan that is resistant to scratches, chips and peeling. It is also toxin-free, with no PFOA or PTFE chemicals added. With the proper care, this pan will last you a long time.

The one thing about this non-stick pan compared to other non-sticks is the extra care needed to keep it functioning properly. It’s very important to read the instructions before using this pan. Like a cast iron or carbon steel, the Red Copper pan needs to be seasoned before it’s first use. It’s a relatively easy process, consisting of spreading a light coating of vegetable oil in the pan and placing it in the oven for 20 minutes at 300 degrees.
